A super-hearty sandwich, which is packed full of delicious flavours and textures. Multigrain bread is filled with a blue cheese and mayo spread, chicken, avocado, bacon, egg and lettuce.

  • 125ml mayonnaise
  • 4 tablespoons blue cheese dressing
  • 8 slices multigrain bread
  • 2 cooked chicken breasts, sliced
  • 1 ripe avocado, sliced
  • 8 rashers cooked streaky bacon
  • 2 hard-boiled eggs, chopped
  • 4 lettuce leaves

  1. Prepare the sandwich spread by mixing together the mayonnaise and blue cheese dressing. Spread 2 tablespoons on one side of each slice of bread.
  2. Top 4 of the prepared pieces of bread with 1/4 each of the chicken, avocado, bacon, hard-boiled eggs and lettuce. Top each sandwich with another slice of bread and serve with the remaining blue cheese spread on the side.

OMG! If you love Cobb Salad this sandwich is for you! Definitely toast the bread to avoid sogginess. I used light mayo and homemade bleu cheese dressing. This was a great way to use up leftover grilled chicken. All I added was thin sliced tomato and red onion. Anytime you combine bacon and avocado you have a hit in my book! Next time I want to try this using tortillas instead of bread and make it into a wrap. Great recipe!-13 Sep 2010

Very good recipe! I did make one change because I wanted to have lunch pretty much prepared for a few friends. I made a chicken salad with all the ingredients except the avocado. To avoid browning, I sliced the avocado just before serving and fanned a few slices across the top of the sandwich.This "chicken salad" received rave reviews.-04 Sep 2007

Cobb Salad Sandwiches

Cobb Salad is one of my favorite salads to order out at a restaurant. The crisp bacon, eggs, chicken, avocado, juicy tomatoes and other fresh ingredients piled into a big bowl makes such a delicious meal! Recently I was craving a Cobb salad but didn’t have any lettuce in my house, and I really didn’t want to run to the grocery store or go get take-out. So I got creative and used what I had in my house. The result was a delicious and satisfying sandwich with all the flavors of my favorite salad! I served it for lunch with a side of fruit and some potato chips and it was the yummiest meal! My kids request this sandwich all the time, so I wanted to share it with you. Enjoy!


Recipe Summary

  • 2 ounces blue cheese, crumbled (1/2 cup)
  • 2 tablespoons sour cream
  • 1 tablespoon mayonnaise
  • 1/4 cup buttermilk
  • Coarse salt and ground pepper
  • 8 slices crusty white bread
  • 1 avocado, pitted, peeled, and thinly sliced
  • 8 slices cooked bacon
  • 1 large tomato, thinly sliced
  • 1 cup shredded cooked chicken, reserved from Cobb Salad
  • 2 hard-cooked large eggs, finely chopped, reserved from Cobb Salad

In a small bowl, whisk together blue cheese, sour cream, mayonnaise, and buttermilk until smooth. Season with salt and pepper.

Lightly toast bread. Divide avocado among 4 slices, along with bacon, tomato, and chicken. Top with eggs, and drizzle with blue cheese dressing. Sandwich with remaining slices.

Method

Prepare your COBB Grill and light a CobbleStone and wait a few minutes until it has turned grey. Or, if you don’t have a CobbleStone on hand, ready your briquettes. Place Frying Pan and Dome Lid on COBB Grill and let heat up for at least 5 minutes.

  • Combine all the ingredients for the burger patties to form a fragrant mince. Divide into appropriately sized burger patties.
  • Mix all basting sauce ingredients in a bowl and set aside.
  • Melt butter and fry onions with the dome cover on for approximately 5 minutes until onions turn translucent. Add sugar and vinegar to mix and simmer to reduce for another 10-15 minutes.
  • Remove frying pan and replace with griddle attachment. Place dome cover back on and allow 5 minutes for griddle to heat up.
  • Oil griddle and place burger patties.
  • Combine basting sauce ingredients into bowl.
  • Flip burgers and baste with sauce. Cook to your liking and serve!

I&rsquove reworked the classic Cobb salad, dressed it with homemade ranch dressing and stuffed it into sandwich wraps to make a filling and fabulous meal. Kale makes an appearance in this wrap to help turn this into a heartier sandwich.

I love kale as much as (OK, maybe more than) the next guy, but even I&rsquoll admit it can be tough to take, and I mean that literally. If you massage kale before serving it, you&rsquoll enjoy it much more. Think about it &mdash don&rsquot you soften up a bit after a massage?

You&rsquoll love this sandwich packed with kale, bits of crispy bacon, hard-boiled eggs, turkey, tomatoes, avocado and blue cheese. Drizzle it all with creamy ranch dressing, and you&rsquoll reach for this sandwich again and again.


Step 3/4

  • 3 tbsp mayonnaise
  • ½ head romaine heart
  • 2 tbsp mustard
  • 200 g thinly sliced deli turkey breast

Swipe a generous amount of mayo on one side of two slices of bread. Add a leaf of lettuce, two slices of tomato, and half the bacon. Top with a plain slice of bread. Spread half the mustard on the top of the bread, then layer on half the turkey meat, and finish with another slice of bread, mayo-side down. Repeat for the second sandwich.


Cobb Salad Sandwich

  • Whenever I go to a restaurant, the first thing that I look for on the menu is some version of a Cobb salad. Something about bacon, egg, avocado, and blue cheese mingling all on one plate makes my mouth start to water. What I love about a Cobb salad is that it’s loaded with a ton of toppings. My husband always teases me that I eat everything BUT the lettuce in a salad so a Cobb salad is a dream to me. Of course, if I happen to get a piece of lettuce stuck to my fork while digging for some bacon then I’ll eat it.

So the perfect solution to my lettuce aversion is to make the classic Cobb salad into a sandwich. This Cobb Salad Sandwich has all of those to-die-for toppings of my favorite Cobb salad piled onto a buttery, flaky, croissant. Seriously, heaven. And in sandwich form there’s only one leaf of lettuce getting in my way of avocado and bacon paradise.

You can spread mayonnaise on your croissant as your “dressing,” or if you’re a little more daring spread some blue cheese or ranch dressing. I’m greedy so I put a little mayo and a little blue cheese dressing on my sandwich here.

I couldn’t stand it any longer…I had to take a bite! Talk about a flavor party in your mouth.
