Madeleine or madeleinette if smaller in shape, are French shell-shaped sweets, a shape given by the mold in which they are cooked. Their flavor is similar to that of a plum cake but more buttery and with an almond aroma. Madeleines remind me of my childhood, my mom used to buy them very often, the package said nanette and my sister and I went crazy. For years I have not eaten them anymore, making them again at home and savoring them again was a dip in the past, a sweet cuddle. Method

How to make madeleines

In a bowl, whip the eggs with the sugar and honey and mix well for 4-5 minutes with a whisk

Add the flour and yeast and gently incorporate.

Pour in the melted butter, the herbs and a pinch of salt and mix well.

Fill a greased madeleine mold with the mixture to 3/4 of their capacity. Refrigerate the molds for 1 hour

Bake the madeleines in a preheated oven at 220 ° and cook for 5 minutes then continue at 180 ° C for the remaining 5 minutes.

Remove from the oven and let cool

Serve the madeleines
