- 600g stewing steak (4 persons)
- Oil for frying
- 2 medium onions
- 1 or 2 carrots diced
- 2 cloves of garlic grated
- 1 parsnip
- 2 sticks of celery
- 500g tin of chopped tomatoes
- 2 green peppers ( or a green and red one)
- 1 large sweet potato diced
- 1 tablespoon of smoked paprika
- 1 teaspoon of ground caraway seeds
- 1 bay leaf
- Salt and pepper to taste
- As much water as required to fill your saucepan (with a beef stock cube)
- 1 or 2 leeks
- A handful of lentils
- 1. Heat up the oil or lard in a pot and braise the chopped onions in it until they get a nice golden brown. Add the stewing steak and fry until the meat is brown. Add the grated garlic caraway seeds and paprika and fry for a few minutes. Add the rest of the ingredients and the water and cook for about an hour until all veggies are cooked. You may want to thicken the goulash at the end with some cornflour.

2. Add meat in batches, brown on all sides before adding next batch. Do not let the meat steam, raise the heat and add oil if necessary.
3. Saute meat until browned on all sides, add paprika, stir until fragrant (smell those onions-yumm) but watch out so it doesn’t burn.
4. Add the broth, caraway seeds, marjoram and tomato paste and simmer until the meat is tender. Depending on the cut, this can take up to 2 hours. If it gets too dry, add some broth.
5. When the meat is tender, in a separate dish mix the flower with a few ts of water and add to the meat little by little, checking on the thickness of the sauce.
6. Simmer until the flowery taste is gone and the sauce has the perfect consistency.
This is one dish that you may want to let sit for a while, allowing the flavors to soak in.
